There are many, many varieties of Mexican pan dulce, but conchas are undoubtably one of the most popular and recognizable varieties. They are sweet delicious balls of bread with a sweeter kind of sugar cookie topping in designs that make the whole thing look like a concha.
Concha means shell in Spanish
I never ever would have thought that I could make them myself until my BFF Maura from The Other Side of the Tortilla suggested that we take an online concha making class with professional baker Eliceo Lara. Eliceo lives Mexico, Maura lives in Illinois and we live in California, but via the magic of Zoom we were all able to bake together.
To be honest, conchas have never been my favorite … until now
The conchas that I have access to in the United States tend to be dry, like very dry and dry pastries are not my jam even if they are cute. But Eliceo’s recipe produces fluffy, moist conchas that are impossible not to gobble up.
It was such a fun activity to do, especially right now when we’re all still trying to stay home as much as possible. I highly recommend taking a class like this if you are interested in learning how to cook or bake something you love and can’t get your hands on right now.
