Cream of Wheat Cookies

Cream of Wheat Cookies Recipe

Cream of Wheat is a favorite breakfast of mine, especially on cold mornings. I have fond memories of it from childhood. One of my favorite uncles (they’re all my favorite) used to make it before the sun came out and share a big bowl of it with me. It makes me feel comforted and cozy.

I am not the main cook in our home. I am spoiled by Unknown Papi’s excellent cooking and quite frankly I’m lazy. Most of the time I don’t feel like cooking, but the other night I dreamt of Cream of Wheat cookies. I’ve never had Cream of Wheat cookies. I didn’t know if they existed. Turns out they do, so I made some and they are pretty good.

I didn’t actually use Cream of Wheat, I used no-brand-name farina. I found this recipe online and doctored it because I am incapable of following a recipe without changing it. Here’s how I made them…

Ingredients:

  • 3/4 cup butter
  • 3/4 cup dark brown sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 1.5 cup flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup farina (cream of wheat)
  • 2 tablespoons ground flax

Instructions:

Cream together butter, sugar, vanilla, and egg.
Add the rest.
Roll them into little balls.
350 degrees 15 minutes.
Dip in powdered sugar while still warm.

They ended up tasting kinda sorta like Mexican wedding cookies, which I love. I will totally make them again and add pecans to the mix. I can also see myself making a batch with cinnamon/nutmeg. Plus they look kinda pretty, dontcha think? I think they might make an appearance as holiday gifts this year.

I love Cream of Wheat. I need to try these. Growing up we ALWAYS had rice with warm milk and a little sugar for breakfast. At the time I HATED it but now I will sometimes crave it – especially on cold mornings.

I also have fond memories of Cream of Wheat from my childhood. My brother and I would go to our grandma’s  house for the weekend occasionally, and she’d always make us Cream of Wheat with butter and maple syrup for breakfast.  Guess what breakfast I love to make for my girls now? Such a strong emotional memory for me.

Your cookies look yummy, I will definitely try them!

I wonder if Malt of Meal (remember that one) would give the cookies a chocolatey taste.

I must try these cookies – they look delicious and nutrious too.  My husband is the main cook most of the time at our house too.  I love it when he cooks and allow me to do the baking!  🙂

Yum. Those look delicious!  Love wheat cookies.

I have quite a bit of wheat bran (about 1200 grams). Any suggestions how I can use it? I wish I had an oven too. I only have a microwave.
