Easy Chicken Marinades

Coming up with family dinner ideas on the regular is NOT my forte. Many evenings I default to chicken because we all like it, but if I were to serve my family chicken the same exact way multiple times a week, they would not go for it. They are evil like that. So you see those gorgeous grilled breasts of chicken up in that picture above? Although they look the same because they were all grilled, they are actually three different dinner options because they’ve been marinated three different ways. From left to right, I present to you dijon, taco spice and teriyaki grilled chicken breasts.

Interspersing those three throughout the week with different sides is a complaint-free proposition because they all taste great, but different so my kids think they are workin’ me really hard when in reality I’m the one getting one over on them because I marinade them all at the same time. Less work for me. Woo hoo!

OK, now back to my super easy chicken marinades! (Tip: I butterfly the chicken breasts so they cook more evenly and I prefer to grill them outdoors, but you can grill on the stovetop too.)

Dijon Marinade

3 tablespoons Dijon mustard
3 tablespoons olive oil

Directions:

Mix the mustard and olive oil together, marinate the chicken for at least 30 minutes and then grill. We usually serve this with some grilled corn on the cob and a simple salad.

Taco-spiced Dry Rub

I package taco seasoning mix

Directions:

Truth be told, this is more of a dry-rub than a marinade. Simply rub the taco seasoning on the chicken breast (I cover rather thoroughly) and let it sink in for at least 30 minutes, then grill. Once the chicken is done, if you like tacos you can chop it up and use it to make tacos or serve it whole with a side of beans and rice.

Teriyaki Marinade

1 bottle of teriyaki marinade and sauce (you won’t need the whole bottle)

Directions:

Use enough teriyaki marinade to cover your chicken and let it marinade for at least 30 minutes then grill. This pairs well with white rice and grilled asparagus.
