Never go to the supermarket hungry. I did and I came home with a premade pie crust and then had to figure out what to do with it. I knew I had sweetened condensed milk that I could use and decided to pair it with Meyer lemons from our backyard to make a semi-homemade Meyer lemon pie. The result was a creamy refreshing treat.
Meyer Lemon Pie
Ingredients:
3 egg yolks
1 (14 oz) can sweetened condensed milk
1/2 cup of Meyer lemon juice
1 pre-made pie crust
whipped cream
Directions:
Preheat oven to 350°
Beat egg yolks and condensed milk on high for about 5 minutes.
Continue beating while gradually adding Meyer lemon juice.
Pour into pre-made pie crust.
Bake for approximately 17 minutes to cook eggs.
Let cool, then refrigerate.
Serve with whipped cream.

The pie was ridiculously easy to make and the finished result was wonderful. I gave some to my mom and she went nuts for it. If you like a tart yet sweet treat, I would definitely recommend this. Also, keep in mind that you don’t have to use Meyer lemos, you can use any lemons you like or even limes.

Yeah, it was one of those “ready” to go kind of crusts. I had it and needed to use it, that’s what inspired the pie.
