Rotisserie Chicken Instant Pozole Cheat

Guess who made pozole for the first time EVER?! (Raising hand enthusiastically) Me!!! As a matter of fact I threw a last minute pozole party and thanks to Teasdale Easy Prep Spicy Red Pozole, a store-bought rotisserie chicken and a little doctoring on my part the pozole party was a hit and so incredibly simple to put together.

I’m excited to share my rotisserie chicken instant pozole cheat with you because it’s simple to prepare, easy to love and the people you serve it to will honestly think you put a lot more effort into it than you actually did.

Instant Pozole Recipe

Rotisserie Chicken Instant Pozole

Ingredients:

  • 1 Teasdale Easy Prep Spicy Pozole 6 pound 12 ounce can
  • 1 store-bought rotisserie chicken
  • 32 ounces of low sodium chicken broth

Garnish suggestions:

  • 1/2 white onion chopped
  • Fresh cilantro finely chopped
  • 2 sliced avocados
  • Cabbage chopped
  • Limes or lemons quartered

Directions:

Put contents of one can of Teasdale Easy Prep Pozole in a large stock pot, mix in 32 ounces of low sodium chicken broth and place on stove top over high heat.

Remove the meat from your rotisserie chicken and kind of shred it with your hands, no knife necessary. Discard the bones (and skin, if you like or nibble on it like I did). Add the shredded chicken to the pozole and stir it in. Bring the whole thing to a boil then simmer for at least 5 minutes and no more than 45 minutes.

Have all your garnishes out and accessible so that everyone can add whatever they like to their individual bowl of pozole once it is served.

Sit back, enjoy your bowl of pozole and get ready to be complimented on one of the easiest meals you’ve ever made.

Honestly, before this experience I didn’t even know there was such a thing as instant pozole because I’ve been spoiled by tías, tíos and a husband who make awesome pozole from scratch, but I ain’t got time to make my own from scratch right now. That’s not to say I never will, but for now I’m loving the convenience of being able to throw a delicious pot of pozole together in minutes.

What is great about this instant pozole option is that you can doctor the pozole to give it your own flavor. If you like your pozole spicy enough to make you sweat, I would suggest upping the chile factor in the broth. You can also customize it with the protein you use. I went for rotisserie chicken and LOVE it, but maybe you like pork more so simply add some cooked pork to it instead.
