Hola Chulas y Chulos! How you doin’? My chancla and I are over here amazed at this whole “unicorn” obsession people have. You know the whole eating or drinking stuff that is a rainbow of colors like the Unicorn Frappuccino that Starbucks offered for a limited time? People went crazy over it and that craziness has inspired the Unicorn Quesadadilla from El Premio Mayor food truck in Fresno, Calif.
Behold the Unicorn Quesadilla.
Kinda makes you feel like you’re trippin’, no?
The rainbow-liciousness is created with food coloring and white cheddar cheese.

It appears the Unicorn Quesadilla was only offered for one weekend.

El Premio Mayor has a restaurant as well, but the Unicorn Quesadilla was exclusive to their food truck.
Will they bring it back?
¿Quién sabe? Although, I have a strong feeling that this isn’t the last of the Unicorn Quesadillas. I’m sure copycat versions are on their way.
