Avocado and Cucumber Salad

Surely, you’ve met my friend the avocado or as I like to call him, mi cuate, el aguacate. This guy is welcome in my home and at my table all year round.

Aguacate

Most of the time, mi cuate, el aguacate gets transformed into the easiest guacamole ever or I have been known to make a BLT guacamole as well, but do not think that el aguacate has to be smashed to be a smash. Not at all.

Did you know that el aguacate gets along superbly with cucumber? It’s true, they even look good together? Check it…It’s hard to tell where the avocado ends and the cucumber begins.

Cucumber-and-avocado-Salad

El aguacate with cucumber is a party in your mouth, but add a few more guests and make sure to invite some powdered chile and it is a full on fiesta called, Avocado and Cucumber Salad!

Pico-de-Gallo

This salad is simple and delightful and a great way to add some freshness to your table for everyday and special occasions. Here’s how I make it:

Ingredients:

  • 2 cucumbers, peeled and cubed
  • 2 avocados, peeled and cubed
  • a handful of fresh chopped cilantro
  • a handful of chopped green onions
  • 1 clove minced garlic
  • salt to taste
  • 1 lime
  • 1/4 lemon
  • a dash of your favorite chile powder

Directions:

In a large bowl, combine cucumber and avocado. Salt. Add minced garlic, cilantro, and onions. Squeeze lemon and lime into the salad and toss. Cover and refrigerate for about 30 minutes before serving.

The result is mouthwateringly delightful; it reminds me of the Mexican street snack of cucumbers with lime and chile, which I love. Celebrate any season with avocados!

    I just love the way you’ve written this post. 😀 I must get a party started in my mouth too! Just thinking of that lemon/chili/cucumber/cilantro combi has me drooling.

    By the way – what’s lime “and” lemon?  Is lime sweet lime? 🙂
