I’d like to introduce you to my family’s arugula and parmesan salad with homemade citrus dressing. It is incredibly simple to make and tastes like WOW! Now that school is back in session, this beauty will be making a weekly appearance during our Friday family grub and movie nights. Pairing this easy to make salad with pre-prepared frozen Nestlé products gives me more time to spend chillaxin’ with my family.

Seriously, this arugula salad goes great on top of DIGIORNO® RISING CRUST® Pizzas.

As soon as school was back in session I geared up for our Friday decompression sessions by visiting Safeway to stock up.

I hit up the frozen foods section and grabbed DIGIORNO® RISING CRUST® Pizzas, then grabbed STOUFFER’S® Family Lasagna and also SKINNY COW® Frozen Snacks because it wouldn’t be a family Friday grub and movie night without a treat.

I also picked up the goods to make the salad.

Baby Arugula Salad with Homemade Citrus Dressing

Baby Arugula Salad and Dressing Recipe

Ingredients

For the salad:

  • Baby arugula (I get the triple-washed ready to eat kind)
  • Shredded parmesan

For the dressing:

  • 1 orange (for the juice)
  • 1/4 lemon (for the juice)
  • 1 crushed garlic clove
  • Olive oil
  • Pinch of salt
  • Black pepper to taste

Directions

Put as much baby arugula as you would like into a large bowl and sprinkle with a generous amount of shredded parmesan.

Put salt, pepper and crushed garlic in a small bowl. Squeeze the orange and lemon over the bowl to get all the juice out of them making sure to remove any seeds. Mix everything together and then slowly drizzle and mix in olive oil. The amount of olive oil that you add is up to you. I recommend you keep tasting as you mix until you get a blend that makes your mouth water.

Once your dressing tastes like WOW, toss the salad with enough dressing to coat the baby arugula.

Serve the salad over your pizza or as a side for your lasagna and whatever you do, don’t forget to treat yo’ self and your family after the meal.

(PRO TIP: If you have extra dressing dip some bread or pizza crust in it and munch away. So good!)
