Easy Choco-Chip Flan Cake Recipe

Do you merienda? If you do, this delicious chocoflan with CHIPS AHOY cookies is perfect for meriendas.

Just in case you are not familiar with the concept, merienda is like a mini meal between meals. So let’s say like a stop-gap between breakfast and lunch or lunch and dinner. I grew up with meriendas. I remember visiting my abuela in Tijuana during summer vacation and after lunch I would play outside with my cousins. A few hours later, my grandmother would call us in and give us a merienda which usually consisted of hot chocolate and fresh pan dulce. It was a treat we all looked forward to and it kept us going until dinnertime.

Now, that I’m a mom I find that my kids need a little sumthin’ sumthin’ after school to tide them over until dinner. It’s a fun way to bond and chat while we all snack and it also helps them have energy to do their homework because hungry kids cannot concentrate. I usually give them some fruit and a treat. This choco-chip flan was a big hit.

I found the original CHIPS AHOY! chocolate flan cake recipe by Nabisco and put my own twist on it. I chopped the CHIPS AHOY! cookies and mixed them into the cake batter instead a creating a different layer out of them. I love the way the cookies incorporated into the cake.

Easy choco-flan with cookie surprise.
Ingredients
  • 15 CHIPS AHOY! Cookies, chopped
  • 1 pkg. (2-layer size) devil’s food cake mix
  • 1 can (14 oz.) sweetened condensed milk
  • 1 cup 1% milk
  • 2 eggs
Instructions
  1. Prepare cake batter as directed on package, fold in the chopped CHIPS AHOY! cookies, pour mixture into 12-cup fluted tube pan sprayed with cooking spray.
  2. Blend sweetened condensed milk, 1% milk and eggs in blender until well blended; pour over cake and cookie batter mixture in pan. (FYI, the cake and flan will invert during the baking process.)
  3. Bake at 350 degrees for 45 minutes to 1 hour or until toothpick inserted near center comes out clean. Cool cake in pan 10 min. Loosen cake from sides of pan. Invert cake onto wire rack; gently remove pan. Cool cake completely.
 
Notes
If you have a 10-cup fluted tube pan, prepare recipe as directed removing 3/4 cup of the prepared cake batter before pouring remaining batter over cookies in prepared pan. Spoon removed batter into 3 prepared muffin pan cups, then bake as directed on cake mix package for cupcakes.
