Hominy Corn Tortilla Soup Slow Cooker Recipe

I’d like to introduce you to my new favorite soup: hominy and corn tortilla soup. I made this yumminess in the slow cooker and I am in LOVE! I eagerly ate this soup three days and plan on making it again very soon.

Crock pot soups are always a hit during the colder months because it’s soup weather and they are a great self-serve option for holiday parties and pot lucks.

I’ve always bee a fan of tortilla soups, but I have to say I’m partial to ones that have a tomato base like this one. This soup is perfect on it’s own, but you could also garnish it with cilantro, shredded sharp cheddar cheese or both.

Hominy Corn Tortilla Slow Cooker Soup

Ingredients:

  • 1 quart chicken broth
  • 1 1/2 cups water
  • 28 ounce can of crushed tomatoes
  • 1/3 cup tomatoes paste
  • 2 teaspoons of ground cumin
  • 1/2 medium white onion chopped
  • 4 cloves chopped garlic
  • 1-2 jalapeños seeded and chopped
  • 1/2 teaspoon of chili powder
  • 1 handful of tortilla chips ( I literally reached into my favorite bag of tortilla chips and grabbed a handful)
  • 1 lb bag of frozen corn kernels
  • 15 ounce can of white hominy, drained and rinsed (I used Teasdale White Hominy)
  • Salt to taste (I used about 1 tablespoon)

Crock Pot Tortilla Soup Recipe

Directions:

Place chicken broth, water, crushed tomatoes, tomato paste, cumin, onion, garlic, jalapeños, chili powder, tortilla chips, salt and half the bag of frozen corn into your slow cooker. Give it all a loving stir and cook on high for 4 hours (or low for longer). Using an immersion blender or an actual blender, blend the contents of the slow cooker. Then add the other half of frozen corn kernels and the white hominy to the soup and cook for about another hour.

Tortilla Soup Recipe

When you serve it, you can garnish it with crumbled tortilla chips, shredded cheese and cilantro. I tend to go a little bonkers with the cheese because YUM!

    This soup looks delicious!
    i’m a big crock pot fan. Now if it would just cool down a little in Los Angeles so I can crank out some soup I’d be happy!

    My favorite soup is my mother’s Swedish soup called Ärtsoppa, which is yellow pea soup which you can add pork or lamb if you wanted. I just made a pot of Caldo Verde with potatoes, onions and Kale leaves for the rainy afternoon.
