I just tried Trader Joe’s Mexican Style Roasted Corn with Cotija Cheese for the first time and I thought I’d tell you about it in case you haven’t tried it yet.
I shop at Trader Joe’s every week, but I tend to stick to buying the ol’ things that I always buy, which is why I didn’t even know Trader Joe’s had a Mexican style roasted corn option until a good friend told me about it.

What is it?
If you are familiar with elote, you don’t need an explanation. But just in case this is how Trader Joe’s describes it on the actual packaging:
This unique take on corn combines flavors inspired by elote, a popular street food in Mexico. Our version is lime-spiked, slathered in a smokey creamy sauce, and topped with authentic crumbled cotija cheese.

You can find the Mexican Style Roasted Corn in the frozen section of TJ’s by their other frozen corn options.
How to make it:
Making it is pretty dummy proof. I made it on the stove top and all you do is open the bag, put aside the cheese packet, heat 2 tablespoons of oil in a skillet over medium heat, add the corn and frozen sauce pellets, sauté until the cheese pellets have melted and completely cover the corn. Once the corn is fully coated with sauce, you sprinkle it with the cheese you set aside and it’s ready to eat.
And the taste?
It’s GOOD! Trader Joe’s Mexican Style Roasted Corn With Cotija Cheese is a winner in my book. The bag says that it contains 3.5 servings and I ate the whole thing because YUM!
In conclusion:
If you like elote, this is a great frozen food option to keep on hand. It’s easy to make, taste great and I don’t remember how much it cost, but Trader Joe’s tends to be pretty reasonable.
